How To Cook A Turkey On A Barbecue
As the holidays near it’s only natural to think about having a traditional turkey dinner with all the extra fixings. Although tradition is comfortable, why not try something a little different this year. Perhaps this year is the time to create a new tradition by adding a little twist to the normal fare.
Why not put your gas grill to work this season and cook your turkey with it. It’s actually an easy thing to do. On top of that, it frees up your regular oven giving you lots of room to prepare the rest of your holiday feast.
When buying your turkey, be sure to keep in mind the size of your grill. Avoid buying one that’s too large to fit on the grill. With the turkey in its pan, you should be able to close the lid of grill completely, with a little space left over so the lid doesn’t touch the turkey. If you discover that the one you bought is too large, you can still cook it on your grill. All you need to do is use something to prop open the lid and you can then use some heavy aluminum foil to cover the gap.
Prepare the turkey as usual, including the stuffing. Put it in a sturdy tray – I prefer a disposal aluminum pan when grilling. Place it on the grill over a burner that can be turned off. You’ll leave the other burners on, but you want to cook the turkey using indirect heat, not directly over a flame.
If you want to get a smokey flavor, you’ll need some wood chips. Generally you can find these wherever you can buy grills or grill accessories. Follow the instructions that come with them and soak them in water. You can purchase a special metal tray made for using wood chips or you can simply put them in some aluminum foil. As they heat up and dry out they release a flavored smoke that surrounds your cooking turkey. Position the tray with the soaked wood chips directly over one of the lit burners.
Close the lid of your grill completely. If you’re not able to close it fully without touching the turkey, then prop the lid open and cover the gap with heavy aluminum foil It you need to do that, then add extra cooking time because some of the heat is going to escape. However, the foil should help to keep the flavored smoke in.
Cooking time will be determined by the size of the bird, if it’s stuffed and whether or not you can fully close the grill’s lid. Rotate the turkey 180 degrees, after a couple of hours to make sure it’s cooking evenly.
As you would with any poultry, make sure it reaches an internal temperature of 160 degrees F. Invest in a good meat thermometer so you don’t have to guess if your turkey is done. Undercooked poultry is a health concern.
A fully cooked turkey will be nicely browned and the juices will run clear if you poke the thigh with a skewer. Think about giving your turkey a glaze before carving it or even add a little barbecue sauce to the traditional cranberry sauce. Experiment with different ideas and you may just start a new tradition.
